Food Safety and Quality Assurance Senior Technician

Location: Sheetz Corporate - Burlington, NC



Ensure and verify that foods produced, assembled, and distributed from SDS Burlington adhere to established high food safety & quality standards. Ensure food safety and quality assurance programs and procedures are implemented and followed.

ESSENTIAL FUNCTIONS: (other duties may be assigned)

  1. Recommend and establish food safety and quality procedures via written programs that will be implemented in the SDS Burlington facility.
  2. Assist in training, and implementation of food safety and quality programs for receiving, preparation, storage and shipping of product.  Verify compliance to QA programs such as SOPs, SSOPs, Food Safety Plans, HACCP, SQF Systems, GMPs/GDPs, Specification Verification, Chemical Testing, Allergen Control, Traceability, etc.
  3. Conduct verification and validation of critical food safety programs to comply with company food safety and quality standards as well as government regulations.
  4. Verify the product rotation and date coding procedures in all areas for short-coded items to ensure food safety and top quality to our stores.
  5. Assist in investigating complaints or issues pertaining to product in stores that have been manufactured or distributed through SDS Burlington.
  6. Collect microbiological samples for environmental and product analysis.
  7. Conduct chemical testing to ensure product and ingredients meet written specifications.
  8. Conduct appropriate follow-up procedures when standards are not met.
  9. Prepare appropriate schedules for testing – microbiological and otherwise.
  10. Ensure FSQA collected data is maintained appropriately and reports are prepared in a timely manner.
  11. Provide appropriate updates and consistently communicate with FSQA Manager.
  12. Provide support as backup for FSQA Manager as needed, including role as facility backup SQF practitioner.
  13. Ensure all required testing and data collection is being completed correctly.
  14. Conduct, document and communicate results of product, retention, and microbial evaluations to management teams.
  15. Maintain laboratory in an organized and sanitary condition while maintaining and practicing good laboratory practices.
  16. Conduct microbiological sampling and testing of environmental and product shelf-life samples from Sheetz Brothers Kitchen – Burlington.
  17. Assist in conducting monthly self-inspections of the SDS Burlington,
  18. Assist in evaluating products against written specifications and the targeted national brands.

REQUIREMENTS: (Equivalent combinations of education, licenses, certifications and/or experience may be considered)


  • 2 Year Degree in related field or equivalent required.
  • 4 Year Degree in related field or equivalent preferred.


  • 2 years in food safety or related field required
  • 1 year in a laboratory environment
  • Microbiological laboratory practices

Licenses/Certifications (Required within 1 year of employment)

  • ANSI Accredited Food Protection Manager Certification
  • Advanced HACCP Certification
  • Seafood HACCP Certification
  • Implementing SQF Systems
  • Principles of Internal Auditing
  • Preventive Controls Qualified Individual Certification

Tools & Equipment:

  • Hand tools (measuring devices,  etc.)
  • Lab testing equipment (pH meter, Aw meter, moisture analyzer, microbiological analysis equipment)
  • General Office Equipment
